&lt;p&gt;More good news: WE&amp;#8217;RE BREWING ONE MORE BATCH THIS WEEK FOR WINTERTIME!&lt;/p&gt;

&lt;p&gt;We&amp;#8217;ve also decided that we&amp;#8217;re going to provide beer to you in the CSA format (i.e. you&amp;#8217;re donating money for a share of each brew and we&amp;#8217;re doing the hard work for ya; it&amp;#8217;s actually a CSB - community supported brewery). &lt;p&gt;We&amp;#8217;re getting started on our second batch of beer in as many weeks this morning. As you can see by the title (and by the post we made last night&amp;#8230;) it&amp;#8217;s an apple-infused amber ale. We&amp;#8217;re using local apples, local apple cider and are currently eating local apple cider doughnuts (nothing better!).&lt;/p&gt;
&lt;p&gt;As for the brew today, in addition to the apples and cider, we&amp;#8217;re using liquid amber malt extract, Breiss caramel malts (120L, and 40L for those of you keeping score at home), some Breiss victory malts, and some extra special spices and flavorings to spruce it up! It is technically autumn after all, right?! We&amp;#8217;ve got to make it festive!!&lt;/p&gt;
&lt;p&gt;For hops, we&amp;#8217;ve got our favorite - Cascade. The American classic. And just like we added a twist last week with the yeast, we&amp;#8217;re using a Hefeweizen yeast to really bring out the fruitiness.&lt;/p&gt;

The recipes are original, the beer is tasty, and we&amp;#8217;re psyched to be bringing it to you!&lt;/p&gt;
&lt;p&gt;Our first beer for the fall is a sort of Rye Cream Ale. Using flaked and malted rye with pale malts as the base, we added whole Centennial hops for the bitterness and aromas and for a little twist, we used German (Kolsch) ale yeast instead of the usual American ale yeast. We&amp;#8217;re hoping this will bring out a unique crisp flavor that you wouldn&amp;#8217;t normally get from an American-style Rye.&lt;/p&gt;
&lt;p&gt;Tomorrow, we&amp;#8217;ll be moving the beer from the primary fermenter to the secondary fermenter, then beginning to brew our next beer - an Apple Amber Ale. (We&amp;#8217;re calling it the &amp;#8220;Apple Amberst Ale&amp;#8221; &amp;#8230;you know why.) In the morning, we&amp;#8217;ll give you the skinny on that beer.&lt;/p&gt;
